Making stuffed peppers were never so easy. The only thing you need to cook ahead of time is the rice. Prepare the green peppers, fill them with the meat/rice mixture, place in the slow cooker and forget about them until dinner!
4 medium bell peppers, green, red, orange and/or yellow
1 lb. lean ground beef
1/4 c. finely chopped yellow, white or green onion
1 1/2 c. cooked rice (leftovers are great)
1 t. seasoned salt
1/4 t. garlic powder
1/2 t. black pepper
32 oz. spaghetti sauce, your favorite
non-stick cooking spray
Line slow cooker with a slow cooker liner for easy clean up. Spray liner with non-stick cooking spray.
Mix ground beef, onion, cooked rice, and seasonings well.
Wash peppers. Cut tops off of them and hollow out seeds and membranes.
Stuff each pepper with one fourth of the ground beef mixture.
Place stuffed peppers in the slow cooker and cover with spaghetti sauce. Cover and cook on low for 6 - 7 hours or until ground beef is cooked through and green peppers are tender.
