This is not one of those tasteless slow cooker chicken recipes. It is so simple, just put everything in the slow cooker, cook and serve! Serve with rice, egg noodles or on sandwiches.
1 large chicken, washed, patted dry and cut into serving pieces or 1 1/2 lb. chicken breasts or thighs
1 c. packed brown sugar
2⁄3 c. apple cider vinegar
1⁄4 c. Sprite, 7-Up, or any lemon-lime soda ( diet is fine)
3 T. minced garlic
2 T. soy sauce, regular or low-sodium
1 t. freshly ground black pepper
dash red pepper flakes
chopped parsley, if desired for garnish
cornstarch, for thickening after cooking, if desired
Line a slow cooker with a slow cooker liner for easy clean up. Spray liner with non-stick cooking spray.
Mix all remaining ingredients together except for the chicken in the crock. and then place the chicken in the crock. Spoon liquid over the chicken pieces.
Cook on Low 6 - 8 hours.
Serve with rice or egg noodles, if desired. It makes great sandwiches, as well.
**If you want a thicker sauce, thicken the juices after cooking with a little cornstarch.
