If you like meatballs, then this recipe is for you! It is so easy because you start with frozen packaged meatballs, Bisquick, and refrigerated hash browns.
1 1/2 c. refrigerated shredded hash brown potatoes (from a 1 lb. 4 oz. bag)
1/2 t. salt
1/4 t. pepper
3/4 c. frozen sweet peas, thawed and drained
12 frozen meatballs, with or without seasonings (from a 16 oz. bag), thawed and cut in half
1 c. shredded cheddar cheese
1/2 c. Original Bisquick® mix
1 c. milk
2 eggs
Heat the oven to 400 degrees. Spray a 9 inch glass pie plate or deep-dish pie plate with non-stick cooking spray.
In a small bowl, salt and pepper potatoes; stir.
Layer potatoes, peas, meatballs and cheese in the pie plate.
In a medium bowl, stir Bisquick mix, milk and eggs with a fork or wire whisk until blended. Pour into the pie plate.
Bake 30 - 35 minutes or until the center is set and the top is golden brown. Let stand 5 minutes to set before cutting.
**This pie can be covered and refrigerated up to 24 hours before baking. It may need to bake a bit longer than the recipe directs since you’ll be starting with a cold pie. Watch carefully for doneness.
