Description

Enjoy this spaghetti full of fresh ingredients like cherry tomatoes, mozzarella, basil and parsley.

Ingredients

1 lb. dry spaghetti
3 T. extra-virgin olive oil
4 cloves garlic, minced
2 lb. cherry or grape tomatoes in multiple colors, halved or quartered
8 oz. fresh mozzarella, cut into 1/2-inch pieces
fresh basil, torn or thinly sliced
chopped parsley, if desired
salt, to taste
freshly ground black pepper, to taste
1 c. pasta cooking water

In a large pot of boiling salted water, cook pasta according to package directions until al dente.

In a medium saute pan, heat the olive oil over medium heat. Add the garlic and saute until softened, about 2 minutes. Transfer to a large bowl. Add the tomatoes, mozzarella and basil, season to taste with salt and pepper, and toss to combine.

Drain, (save a cup of cooking water) but don't rinse the spaghetti. Immediately add it to the tomato mixture. Check the seasoning and garnish with additional basil and parsley, if desired. If a little liquid is needed, slowly add in the pasta cooking water until it is to your liking.
