Description
Enjoy this spaghetti full of fresh ingredients like cherry tomatoes, mozzarella, basil and parsley.
Ingredients
- 1 lb. dry spaghetti
- 3 T. extra-virgin olive oil
- 4 cloves garlic, minced
- 2 lb. cherry or grape tomatoes in multiple colors, halved or quartered
- 8 oz. fresh mozzarella, cut into 1/2-inch pieces
- fresh basil, torn or thinly sliced
- chopped parsley, if desired
- salt, to taste
- freshly ground black pepper, to taste
- 1 c. pasta cooking water
Steps
- In a large pot of boiling salted water, cook pasta according to package directions until al dente.
- In a medium saute pan, heat the olive oil over medium heat. Add the garlic and saute until softened, about 2 minutes. Transfer to a large bowl. Add the tomatoes, mozzarella and basil, season to taste with salt and pepper, and toss to combine.
- Drain, (save a cup of cooking water) but don't rinse the spaghetti. Immediately add it to the tomato mixture. Check the seasoning and garnish with additional basil and parsley, if desired. If a little liquid is needed, slowly add in the pasta cooking water until it is to your liking.
