BBQ Onion and Bacon Wrapped Meatball

Ingredients

2 yellow onions, whole
1 lb. lean ground beef
1/4 c. onions, diced
1/4 c. parsley, chopped
1/4 c. mushrooms, chopped
1 T. brown sugar
1 T. Traeger Prime Rib rub (or coarse salt)
1 T. spicy ketchup
1 t. soy sauce
1 t. Worcestershire sauce
1/4 c. Panko bread crumbs
1 package bacon
1 bottle BBQ sauce

Preheat oven to 400 degrees.

Peel the exterior skin of the yellow onions; cut off the tops and bottoms. Slice onion in half; peel apart the layers of the onion. Set the largest outer layers of the onion in a medium sized bowl; set aside to be used to stuff with meat.

In a large bowl, add ground beef, diced onion, chopped parsley, mushroom, spiced ketchup, soy sauce, Worcestershire sauce, brown sugar, Traeger prime rub and panko bread crumbs. Mix together.

Form a palm-sized meatball and place the meat inside of two of the large onion layer pieces that had been set aside.

Open bacon package and wrap each onion ball in bacon, to cover it entirely. Use toothpicks to secure the bacon pieces and prevent them from unraveling as they bake.

Place the balls on a rack and place in the oven for 35 minutes, until browned. At 35 minutes, remove the balls from the oven and cover them in BBQ sauce. Once covered, place them in the oven to bake for an additional 5 minutes. (These can also be made on the grill.)

Sprinkle parsley on top of the meatballs for garnish.
