If you want a great meal all in one dish, then you will love this meal. It includes the meat, potatoes and veggies all together and finished in the oven. Serve with a side salad.
4-5 sausages, pork or your choice of Italian
1 lb. potatoes, cubed
1/2 lb. baby carrots, cubed
8 oz. fresh mushrooms, wiped clean or canned mushrooms, drained, optional
1/2 bell pepper, any color, cut into chunks
1 large onion, cut into large chunks
1 fennel bulb or 1/2 t. fennel seed
3 garlic cloves, minced
2 T. oil, your choice
freshly ground black pepper, to taste
salt, to taste
1 1/2 t. Italian seasonings
1/2 c. chicken or beef stock/broth
3-4 T. balsamic vinegar
Preheat oven to 450 degrees.
Combine all of the chopped vegetables in a large roasting pan.
Whisk together the oil, minced garlic, Italian seasonings and fennel. Pour over the vegetables; toss to coat. Season with salt and pepper.
Pour chicken stock/broth over vegetables. Cover with foil and bake for about 30 minutes, or until vegetables are just tender.
Meanwhile, brown sausages in a large skillet over medium heat till just browned. Remove them from the skillet and slice into thirds.
Remove foil from the vegetables; add sausages to pan. Pour in vinegar and stir. Return the pan to the oven, uncovered, 20-30 minutes, or until everything is browned as the sausages are cooked through.
