Chicken Caesar Pasta Salad

Description

This is a great main dish salad that you can easily make for lunch or a light dinner. Make it even easier using store-bought rotisserie chicken.

Ingredients

1 c. mayonnaise or Miracle Whip
⅓ c. sour cream, regular or low-fat
2 large garlic cloves, pressed
2 T. lemon juice
2 anchovies, finely minced, optional
1 t. Worcestershire sauce

1 lb. penne/spiral/or bowtie pasta, cooked al dente and rinsed with cold water
6 large leaves Romaine lettuce, thinly sliced
1½ c. grape/cherry tomatoes
4 green onions. green parts sliced
½ c. finely shredded Parmesan cheese
½ t. freshly ground black pepper
2 grilled chicken breasts, diced

1½ c. croutons

Dressing:
In a small bowl, stir together the first 6 ingredients.

Toss half of the dressing with the cooked pasta; refrigerate 30 minutes.

Mix in all remaining ingredients; serve topped with croutons.

**If leaving out the anchovies, you can salt the mixture or replace anchovies with sliced green olives.
