This seafood dish would make a wonderful breakfast/brunch, lunch or light dinner. If you don't care for seafood, sausage can be substituted.
3 eggs
½ c. mayonnaise
2 ½ T. all-purpose flour
½ c. milk, regular, low-fat or skim
1 t. salt
½ t. freshly ground black pepper
1/3 c. diced bell pepper, any color
1 c. crabmeat, backfin or lump (you could also use fake crabmeat or even sausage)
½ c. onion, minced
6 slices bacon, cooked and crumbled (made in the oven or fried in a skillet)
1 c. grated/shredded cheddar cheese or your favorite cheese (smoked would be fantastic)
9 inch store-bought pie shell or your own homemade
Preheat the oven to 350 degrees.
Make sure that all bits of shell or cartilage have been removed from the crabmeat.
Whisk eggs lightly in a large bowl; whisk in the mayo, flour, milk, salt, and black pepper. Stir in the bell pepper, crabmeat, onion, and bacon.
Prick the pie shell 5 times with a fork. Sprinkle the grated/shredded cheese over the bottom of the crust. Pour the egg mixture on top of the cheese. Bake until the crust is golden brown, 40 to 45 minutes.
