Sopapilla Cheesecake

Description

These sweet treats are easy to make and are inspired by Mexican sopapillas. They make a wonderful breakfast or dessert much like coffeecake and combine crescent rolls, cream cheese with cinnamon and sugar.

Ingredients

2 packages refrigerated crescent rolls
2 -8 oz. packages cream cheese
1 c. sugar
1 t. vanilla
½ t. cinnamon
½ c. butter
½ c. cinnamon and sugar

Preheat oven to 350 degrees.

Press one package of crescent rolls into a 9x13 pan, making sure it is evenly pressed over the entire pan. Set aside.

Beat cream cheese, sugar, and vanilla together. Spread it over the crescent rolls.

Open the last package of crescent rolls and separate them. Press the rolls over the cheesecake layer, creating a layer that completely covers the filling, but first press them together and out on a cutting board before placing over filling.

Melt butter; pour over the second crescent roll layer. Sprinkle cinnamon and sugar over the butter.

Bake 30 minutes.

Serve warm or let cool and chill for several hours before serving.
