Lasagna Soup

Description

Enjoy Italian Lasagna without all of the hassle with this delicious soup. You will be getting your veggies at the same time because this wonderful soup has carrots, celery and zucchini as well. Serve with a salad and crusty bread.

Ingredients

2 T. extra virgin olive oil
1 medium onion, chopped
1 medium carrot, peeled and grated
1 celery stalk, thinly sliced
1 medium zucchini, peeled and thinly sliced
3 cloves minced garlic
32 oz. carton chicken stock/broth
15 oz. can diced tomatoes
8 oz. can tomato sauce
1 T. basil, chopped
8 lasagna noodles
4 cooked hot or sweet Italian sausage, casings removed
1 c. Mozzarella cheese or Parmesan cheese

In a large pot, heat 2T. extra virgin olive oil. Saute onion, carrot, celery, zucchini and garlic until the vegetables are tender, approximately 5-7 minutes.

Pour in chicken stock, diced tomatoes, tomato sauce and basil; bring to a boil. When boiling, break the lasagna noodles into small pieces and add them to the pot. Cook until the noodles are tender, approximately 12-15 minutes.

Slice the cooked Italian sausage in half lengthwise; cut into small pieces. Add the pieces to the soup; continue to boil for another 5 minutes.

Sprinkle 1/4 c. cheese on top of each serving.
