Description
This is a one dish meal complete with meat, potatoes and veggies. It's a gluten free, low carb and diabetic friendly recipe!
Ingredients
- 6 T. olive oil, divided
- 2 lemons, 1 thinly sliced, 1 juiced
- 5 cloves garlic, minced
- 1 t. salt
- 1/2 t. freshly ground black pepper
- 3/4 lb. fresh green beans
- 8 small red potatoes
- 4 boneless, skinless chicken breasts
Steps
- Preheat oven to 400 degrees. Coat a large baking dish or cast-iron skillet with 1 tablespoon olive oil. Arrange lemon slices in a single layer on the bottom of the dish or skillet.
- Wash chicken and pat dry. Wash and trim green beans. Wash potatoes and cut in quarters or halves, if desired.
- In a large bowl, combine the remaining oil, lemon juice, garlic, salt, and pepper and stir; add chicken, green beans and potatoes; toss to coat. Pour mixture into the baking dish; spread evenly.
