This is a one dish meal complete with meat, potatoes and veggies. It's a gluten free, low carb and diabetic friendly recipe!
6 T. olive oil, divided
2 lemons, 1 thinly sliced, 1 juiced
5 cloves garlic, minced
1 t. salt
1/2 t. freshly ground black pepper
3/4 lb. fresh green beans
8 small red potatoes
4 boneless, skinless chicken breasts
Preheat oven to 400 degrees. Coat a large baking dish or cast-iron skillet with 1 tablespoon olive oil. Arrange lemon slices in a single layer on the bottom of the dish or skillet.
Wash chicken and pat dry. Wash and trim green beans. Wash potatoes and cut in quarters or halves, if desired.
In a large bowl, combine the remaining oil, lemon juice, garlic, salt, and pepper and stir; add chicken, green beans and potatoes; toss to coat. Pour mixture into the baking dish; spread evenly.
Bake 50 minutes or until cooked through. Serve warm.
