Want a quick lunch but tired of the same old thing? Make this classic sandwich in a jiffy. There is something about fried bologna that just brings back great memories.
1/2 T. unsalted butter
1/4 inch thick slices of good deli bologna
2 slices white bread, plain or toasted
sharp Cheddar or American cheese, optional
mustard, optional
mayonnaise, optional
lettuce leaves, optional
potato chips, optional
pickle spear, optional
If you have a cast iron skillet, bring it up to a medium-low heat, and add the butter. If not, just use a regular skillet.
To prevent the bologna from curling up while cooking, score the edges of the bologna with a knife.
Add the slice of bologna, and cook for a few minutes on each side., leaving some of the char on the slice. If wanting cheese, add a slice just before finished cooking the bologna. While the bologna is cooking, put two slices of bread in the toaster, if wanting it toasted.
Add mustard or mayo, or both to your toast, if desired. Once the bologna is cooked and charred, add it to the toast. Add lettuce if desired.
Serve with potato chips and pickle spears.
