This casserole is rich and creamy, and is filled with cream cheese, chicken soup, Cheddar cheese with ground beef, onion, corn and green chilies.
1 lb. lean ground beef
12 oz. packaged cream cheese
7 oz. canned cream of chicken soup
2 oz. canned green chilies, drained and chopped
1 large onion, chopped
2 c. Cheddar cheese, grated
1 c. sour cream
1 c. cooked corn kernels
1/2 c. salsa
1.25 oz. packet taco seasoning
2 t. chili powder
Doritos or plain tortilla chips, as desired
kosher salt, to taste
freshly ground pepper, to taste
Preheat oven to 350 degrees.
Heat a large skillet over medium-high heat; brown beef until cooked through. Drain off fat, reserving 1 tablespoon, and saute onions until soft and tender.
Return beef to skillet; season with taco seasoning, salt and pepper; add green chilies and corn kernels to the skillet.
Transfer mixture to a 9x13 or an 11x5 inch baking dish; stir in cheese, salsa and chicken soup.
In a separate bowl, mix together cream cheese, sour cream and chili powder until smooth; spread mixture over the beef and vegetables.
Place dish in oven; bake 25-30 minutes; remove and gently push tortilla chips down into the cream cheese surface, but sticking up.
Serve while still hot.
