Description
This casserole is rich and creamy, and is filled with cream cheese, chicken soup, Cheddar cheese with ground beef, onion, corn and green chilies.
Ingredients
- 1 lb. lean ground beef
- 12 oz. packaged cream cheese
- 7 oz. canned cream of chicken soup
- 2 oz. canned green chilies, drained and chopped
- 1 large onion, chopped
- 2 c. Cheddar cheese, grated
- 1 c. sour cream
- 1 c. cooked corn kernels
- 1/2 c. salsa
- 1.25 oz. packet taco seasoning
- 2 t. chili powder
- Doritos or plain tortilla chips, as desired
- kosher salt, to taste
- freshly ground pepper, to taste
Steps
- Preheat oven to 350 degrees.
- Heat a large skillet over medium-high heat; brown beef until cooked through. Drain off fat, reserving 1 tablespoon, and saute onions until soft and tender.
- Return beef to skillet; season with taco seasoning, salt and pepper; add green chilies and corn kernels to the skillet.
