Chicken Scampi

Description

This dish just might become one of your favorite pasta dishes. It is much like one of your favorite restaurant's menu items, but only better. But you should be the judge.

Ingredients

Sauce:
3 T. butter
2 T. minced onions, dried or fresh
1 t. minced garlic
1 1/2 c. chicken broth/stock
1/2 t. Italian seasoning
1/2 t. fine sea salt
1/2 t. black pepper
1/2 t. red pepper flakes
1 T. dried parsley
1 c. heavy cream

16 oz. angel hair pasta
9-12 chicken tenderloins
salt and pepper
1 c. flour
4 T. olive oil
2 red bell peppers
1-2 red onions
freshly grated Parmesan cheese

In a medium sized sauce pan add butter, onion, garlic and saute over medium heat for a 1-2 minutes, being careful not to let the garlic burn. Add chicken broth/stock, Italian seasoning, salt and pepper, red pepper flakes and parsley. Simmer 15 minutes on medium-low heat.
After 15 minutes, add heavy whipping cream and simmer on low, without boiling for 10 minutes.

In a separate pot, boil angel hair pasta according to the directions on the package.

To prepare chicken tenders, sprinkle with salt and pepper then dip in flour. Fry in a skillet over medium heat with several tablespoons olive oil 3-5 minutes on each side until golden brown and cooked all the way through. Set aside.

Cut onions and bell peppers in julienne strips, making sure to remove all seeds and the white membrane on the inside.

In the same skillet that the chicken was cooked in, add another tablespoonolive oil and saute onions and bell peppers. Cook on high for 3-5 minutes until soft and caramelized.

Add half of the creamy garlic sauce to the pasta and stir to incorporate sauce. Mix all onions and bell peppers into the pasta.

Plate up pasta, adding the chicken on top. Drizzle more sauce over pasta and chicken. Garnish with freshly grated Parmesan cheese.
