This casserole makes a lot, so if you are not going to eat it all in one sitting, you might consider cutting the recipe in half. It is kid friendly and so good!
1 bag frozen meatballs (vegetarian meatballs would work as well)
1 jar marinara or spaghetti sauce
garlic powder, to taste
onion powder, to taste
salt and pepper, to taste
1 c. Mozzarella cheese, shredded
1 c. Italian blend cheese, shredded
1/2 c. Parmesan cheese, shredded
1 loaf fresh French or Italian bread, sliced (frozen Texas toast might be good, as well)
Preheat oven to 400 degrees.
Place meatballs in a pot with the sauce. Add garlic powder, onion powder, salt and pepper to taste. Cook over medium heat until warmed completely through, about 10 minutes. Stir as needed.
When heated through, remove from the heat. Place meatballs in the center of a 9x13 baking dish, layer Mozzarella and Italian blend cheeses over meatballs, topping off with the Parmesan cheese.
Line the slices of Italian bread in the pan all the way around, so that they are keeping the meatballs toward the center of the pan. The bread slices will be standing up in the pan.
**If you would like, you can lightly butter and garlic the bread before placing it in the pan or even brush lightly with olive oil and garlic.
Place in oven and bake about 25 minutes or until cheese is melted and bubbly.
Remove from oven and serve.
