Just about everyone enjoys spaghetti. How about changing it up a little by making spaghetti pie with a meat sauce? Serve with garlic bread/toast and a side salad.
12 oz. spaghetti, cooked
½ c. of the pasta cooking water, reserved before draining the pasta
1 small yellow onion, finely chopped
1 lb. ground turkey or groud sirloin beef
1 c. tomato paste, divided
3 large eggs
1 c. grated Parmesan cheese
1½ c. shredded Mozzarella
2 T. olive oil
salt, to taste
freshly ground black pepper, to taste
Preheat oven to 350 degrees.
Cook spaghetti in well salted water according to package directions. Set aside 1/2 cup of the cooking water before draining.
In a large skillet, saute onions until soft. Add ground meat, and ¾ cup tomato paste. Add half of the reserved pasta water; stir well. Season with salt and pepper, to taste. Consistency should be like a thick Bolognese sauce. Add more cooking water, if needed.
In a large bowl, mix together the cooked spaghetti, eggs, Parmesan cheese, 1 cup of the Mozzarella cheese, and ¼ cup tomato paste.
Grease a 9 or 10 inch pie pan with olive oil. Spread half the meat mixture over the bottom of the pan. Add the spaghetti mixture; press down to level it. Top with the remaining meat mixture, then scatter the remaining Mozzarella on top.
Bake 30 - 35 minutes. Remove from the oven; let sit about 10 minutes.
Cut into slices like a pie. Serve with a green salad.
