This stew is a complete meal. It has potatoes, veggies and meat. What more could you want?
2 lb. lean ground beef
1 medium onion, chopped
2 garlic coves, minced
2 c. tomato juice
2-3 carrots, peeled and sliced
2-3 ribs celery, sliced
1/2 -1 green pepper, seeded, membranes removed, chopped
1 c. corn
2 c. green beans
2 medium potatoes, cubed or 1 c. barley in place of potatoes
2 c. water
1 T. Worcestershire sauce
1/4 t. dried oregano
1/4 t. dried basil
1/4 t. dried thyme
dash of hot pepper sauce
2 T. dry onion soup mix, or 1 beef bouillon cube
1 t. salt
1/4 t. pepper
Brown meat and onions in a large stockpot or saucepan. Drain off and discard grease. Stir in garlic, cook 1 minute, then stir in tomato juice. Heat to boiling.
Line a slow cooker with a slow cooker liner for easy clean up.
Combine stockpot mixture and remaining ingredients in the slow cooker. Cover. Cook on Low 8-10 hours.
