Description
This stew is a complete meal. It has potatoes, veggies and meat. What more could you want?
Ingredients
- 2 lb. lean ground beef
- 1 medium onion, chopped
- 2 garlic coves, minced
- 2 c. tomato juice
- 2-3 carrots, peeled and sliced
- 2-3 ribs celery, sliced
- 1/2 -1 green pepper, seeded, membranes removed, chopped
- 1 c. corn
- 2 c. green beans
- 2 medium potatoes, cubed or 1 c. barley in place of potatoes
- 2 c. water
- 1 T. Worcestershire sauce
- 1/4 t. dried oregano
- 1/4 t. dried basil
- 1/4 t. dried thyme
- dash of hot pepper sauce
- 2 T. dry onion soup mix, or 1 beef bouillon cube
- 1 t. salt
- 1/4 t. pepper
Steps
- Brown meat and onions in a large stockpot or saucepan. Drain off and discard grease. Stir in garlic, cook 1 minute, then stir in tomato juice. Heat to boiling.
- Line a slow cooker with a slow cooker liner for easy clean up.
- Combine stockpot mixture and remaining ingredients in the slow cooker. Cover. Cook on Low 8-10 hours.
