This is an economical, easy and delicious way to make BBQ chicken. Dark meat is less expensive than white, chicken on the bone is juicier and with the skin on you get that yummy goodness.
8-10 chicken thighs and/or drumsticks, bone-in and skin on
2 c. BBQ sauce
olive oil
salt and pepper, to taste
Preheat oven to 400 degrees. Line a baking sheet with aluminum foil.
Coat all sides of chicken with olive oil; season with salt and pepper.
Place chicken skin side down on baking sheet; bake 25 minutes.
Remove chicken from oven; turn oven temperature to 425 degrees.
Coat top of chicken with BBQ sauce. Flip the chicken over, being careful not to tear the skin. Baste other side of chicken, with BBQ sauce and place back in the oven for 7 minutes.
Remove from oven, baste top with BBQ, and place back in oven for 7 more minutes.
Remove from oven, baste, and place back in oven 7 minutes or until chicken is crispy, parts are blackened, and fully cooked.
