Bring your meatball up a few notches by stuffing them with cheese. Serve with your favorite Marinara sauce and pasta or on a sandwich.
1 lb. lean ground beef
1 lb. ground mild Italian sausage
1 c. breadcrumbs, regular or seasoned
1 T. Italian seasoning
3 eggs
4 garlic cloves, minced
1 t. salt
1/2 t. pepper
1/2 lb. Mozzarella cheese, cut into cubes or Mozzarella cheese sticks, cut into cubes
olive oil
Marinara sauce, your choice
In a large bowl, mix the first eight ingredients.
Form meat mixture into 2 inch balls. Place a cheese cube in the middle of the mixture, pressing down to seal the meat.
Heat 1/2 inch olive oil in a large skillet. Brown meatballs and then set aside on a plate/ platter that has been lined with paper towels.
Pour Marinara sauce into pan; bring it to a simmer. Add meatballs and simmer until cooked through, about 30 minutes.
Serve over pasta or on top of a hoagie for a meatball sandwich.
