These chicken parmesan meatloaf muffins are to die for. They are much like meatloaf, but much healthier. Serve with your favorite side dishes and a salad.
1 lb. ground chicken breast
1 egg
½ c. Italian-style breadcrumbs
2 cloves garlic, minced
½ c. red pepper, diced (about ½ medium size red pepper)
½ small onion, diced
1 t. Italian seasoning
¾ c. Parmesan cheese, grated
¾ c. low moisture, part-skim, shredded Mozzarella cheese
¾ c. marinara sauce
fresh basi, for garnish, optional
Preheat oven to 350. Spray a regular sized muffin tin with non-stick cooking spray.
In a large bowl, combine ground chicken, egg, bread crumbs, garlic, red pepper, onion, Italian seasoning and Parmesan cheese. Mix together until just combined, not over mixing.
Use a ¼ cup sized measuring cup to evenly fill each muffin cup with the meat mixture. Press mixture down in to each cup. Top each cup with 1 T. marinara sauce.
Bake 20 minutes; remove from oven.
Top each muffin with about one T. shredded Mozzarella cheese.
Return to oven for 2-3 minutes or until cheese is melted.
Garnish each muffin with fresh basil, if desired.
Makes 12 muffins, each serving is 2 muffins-will serve 6 people
