It's that time of year when you want a warm, comforting meal. What could be easier than making a roast with potatoes, onion and carrots in a crock pot? It has a wonderful gravy/sauce that makes this roast very tasty.
½ (¾ oz.) packet Homestyle Italian Dressing & Seasoning Mix
½ (½ oz.) packet Ranch Salad Dressing & Seasoning Mix
0.87 oz. package dry brown gravy mix
2-3 lb. boneless chuck roast
1½ lb. potatoes, washed and halved
1/2 lb. baby carrots, if desired
1 onion, sliced, if desired
3/4 c. -1 1/2 c. water
parsley for garnish, optional
In a small bowl, combine Italian seasoning, Ranch seasoning, and gravy mix. Stir to blend.
Prick the entire roast with a fork. Rub the dried mix on roast.
Place a slow cooker liner in base of crock pot for easy clean up.
In a crock pot, spread potatoes, onion and carrots, if using, on bottom. Place seasoned chuck roast on potatoes. Pour water around roast.
Cover; cook on High 6 hours or on Low 8 hours. Roast should have an internal temperature of 145ºF.
Garnish with chopped parsley. Serve.
***For a thicker sauce, transfer roast, carrots, onion and potatoes to a platter. Pour the cooking juices into a sauce pan. Stir together 3 tablespoons cornstarch and 3 tablespoons cold water. Bring sauce to a boil; whisk cornstarch mixture into the boiling sauce. Spoon sauce over meat, carrots and potatoes.
