Description
This is a low-carb dish that tastes very much like chicken/turkey and dressing. It's a great way to use leftover turkey or chicken and is a wonderful, hearty meal on those cool or cold nights.
Ingredients
- 3 -4 c. diced cooked chicken or turkey (rotisserie chicken would be great)
- 1 lb. pork sausage
- 1 stalk celery, finely chopped
- 1 T. onion, chopped
- 1⁄2 lb. mushrooms, cleaned and sliced
- 8 oz. cream cheese, softened
- 16 oz. frozen cauliflower, cooked, drained and coarsely chopped
- 8 oz. Cheddar cheese, shredded
- salt, to taste
- 1⁄2 t. pepper
- paprika, to taste, optional
Steps
- Preheat oven to 350 degrees. Grease a 9x13 inch baking dish.
- In a skillet, brown sausage with the celery, onion and mushrooms.
- Stir softened cream cheese into sausage mixture until blended.
