This is a low-carb dish that tastes very much like chicken/turkey and dressing. It's a great way to use leftover turkey or chicken and is a wonderful, hearty meal on those cool or cold nights.
3 -4 c. diced cooked chicken or turkey (rotisserie chicken would be great)
1 lb. pork sausage
1 stalk celery, finely chopped
1 T. onion, chopped
1⁄2 lb. mushrooms, cleaned and sliced
8 oz. cream cheese, softened
16 oz. frozen cauliflower, cooked, drained and coarsely chopped
8 oz. Cheddar cheese, shredded
salt, to taste
1⁄2 t. pepper
paprika, to taste, optional
Preheat oven to 350 degrees. Grease a 9x13 inch baking dish.
In a skillet, brown sausage with the celery, onion and mushrooms.
Stir softened cream cheese into sausage mixture until blended.
Mix all ingredients; spread in the baking dish. Sprinkle top with paprika. Cover baking dish with aluminum foil.
Bake about 30 minutes.
Uncover and bake until hot and bubbly and top is lightly browned, another 10 - 15 minutes.
