It's so much easier and better for you when you bake your meatballs as opposed to frying them. Use a mixture of ground meats or just ground beef, if you prefer.
1 lb. ground beef, ground pork, ground veal mixture
2 eggs, beaten
1⁄2 c. milk
1⁄2 c. grated Parmesan cheese
1 c. Panko breadcrumbs or regular breadcrumbs
1 small onion, grated
2 garlic cloves, minced
1⁄2 t. oregano
1 t. salt
freshly ground black pepper
1⁄4 c. minced fresh basil
Preheat oven to 350 degrees. Grease a baking sheet.
Mix all ingredients. Grate onion with a hand grater directly over the bowl to catch all of the wonderful juices. Form into golfball sized meatballs.
Bake 30 minutes.
Enjoy with your favorite pasta or on a meatball sandwich.
