Makes these egg salad sandwiches with Ranch dressing instead of mayonnasie for a new, delicious taste. Add in chopped green onion, salt and pepper, then serve on croissants. So easy!
Ingredients
- 9 hard-cooked eggs, peeled
- 1/4 c. chopped green onions from about 4 medium green onions
- 1/4 t. salt
- 1/4 t. freshly ground black pepper
- 1/2 c. Ranch dressing
- 6 croissants, split
- 3 c. torn lettuce
Steps
- Cut each egg in half, then remove the yolks and place them in a large bowl. Mash the yolks with fork.
- Stir in the chopped onions, salt, pepper and dressing. Chop the egg whites; stir into yolk mixture.
- Place 1/2 cup of lettuce on the bottom half of each croissant and then top with 1/2 cup egg salad mixture. Cover this with the top half of each croissant.
