Brown sugar, chili powder, garlic and onion powder help make this pulled pork one of the best that you will ever taste. Serve on dollar or regular rolls with sides of your choice.
¼ c. packed brown sugar, divided
2 T. paprika
2 T. dried minced onion
1½ t. salt-free chili powder
1½ t. salt
½ t. garlic powder
½ t. allspice, optional
4 lb. bone-in pork shoulder roast
¾ c. apple cider vinegar
½ c. sliced scallions
24 small dinner or dollar rolls
Line a slow cooker liner in the base of a 4 qt. cooker for easy clean up.
In a small bowl, mix 1 T. brown sugar, the paprika, minced onion, chili powder, salt, garlic powder and allspice. Sprinkle 1 T. of this seasoning into bottom of the lined slowcooker.
Rub the remaining mixture all over the pork. Add vinegar and remaining brown sugar to the slow cooker; carefully stir to mix; add pork.
Cover; cook on low 8 - 10 hours until meat is fork-tender. Remove pork to a platter or a cutting board and shred with 2 forks. Return shredded meat to slow cooker; add scallions; toss to coat.
To serve, spoon about 1/4 cup onto the bottom of each bun. Top with bun tops.
