Description

If you are short on time in the mornings but still want a delicious breakfast, then you have to try this omelette in a jar.

Ingredients

butter flavored non-stick cooking spray
1 T. milk or cream
handful of spinach, washed and patted dry, chopped or torn
2 T. cheddar cheese, shredded (or your favorite)
1-2 T. deli ham or smoked turkey, chopped
2 eggs
salt, to taste
freshly ground black pepper, to taste

Spray a 16 oz. Mason jar or other glass jar with non-stick cooking spray.

Add the milk, spinach, cheese and ham/turkey to the jar. Cover; refrigerate overnight.

The next morning, remove it from the refrigerator; crack in the 2 eggs. Season with salt and pepper. Place the lid back on; shake vigorously for 20-30 seconds, until the eggs are pale yellow.

REMOVE the lid; microwave 90 seconds.

Carefully remove from the microwave; check for doneness. Return to the microwave for 15 second intervals to finish cooking, as needed.

Remove from jar and serve warm.
