Get crispy on the outside and moist on the inside chicken without frying! It is wonderfully tasty and so easy to do.
8 bone-in skin-on chicken thighs
1 1/2 to 2 T. olive oil
1 t. kosher salt
1/4 t. freshly ground black pepper
ground paprika, to taste, optional
granulated garlic, to taste, optional
Preheat oven to 400 degrees. Line a large baking sheet/pan or half sheet pan with foil.
Wash chicken; pat very dry.
Place all chicken pieces on the lined pan, skin side down. Sprinkle with salt and pepper on all sides; turn each piece so that the skin side is up. Drizzle about 1 teaspoon oil over the skin on each piece of chicken and rub lightly to coat. Season again with salt and pepper and the other spices, if using.
Bake for 1 hour, until most of the the fat has rendered out of the chicken and skin is golden brown and crisp. Remove from the oven; allow to rest about 5 minutes before serving.
