This is a soup that you will never forget because it is so creamy and delicious. It is so easy to make, you will make it over and over again. Serve with oyster crackers or a crusty bread and a salad.
1/2 stick butter
1 c. onion, coarsely chopped
1/3 c. flour
4 c. milk or half-and-half
1 T. Old Bay Seasoning
1/2 t. parsley flakes
1 lb. lump crabmeat
3 T. dry sherry or cooking sherry, optional
Melt the butter in a 3 qt. saucepan on medium heat. Add onion; cook and stir 5 minutes or until softened. Add flour, Old Bay seasoning and parsley flakes; whisk until well blended. Whisk constantly while gradually add milk. Bring just to boil.
Stir in crabmeat; reduce heat to low; simmer 20 minutes, stirring occasionally.
Stir in sherry, if using. Heat 1 - 2 minutes.
Garnish with additional Old Bay seasoning, if desired.
