Description

This pasta makes a fantastic main dish or serve it as a side dish. Either way, you and your family will love the creamy sauce from the avocados!

Ingredients

  • 12 oz. spaghetti or your choice of pasta
  • 2 ripe avocados, halved, seeded and peeled
  • 1/2 c. fresh basil leaves
  • 2 cloves garlic
  • 2 T. freshly squeezed lemon juice
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 1/3 c. olive oil
  • 1 c. fresh tomatoes, halved
  • 1/2 c. canned corn kernels, drained and rinsed
  • shredded Parmesan cheese, optional

Steps

  1. In a large pot of boiling salted water, cook pasta according to package instructions; drain.

  3. Combine avocados, basil, garlic and lemon juice in the bowl of a food processor; season with salt and pepper, to taste.
