This is a great dish to try if you are tired of your breakfast. It simple and easy to make and has a lot of tasty ingredients. Serve with toast, if you would like.
1 russet potato, washed and cubed
1/3 c. chopped onion
1/4 c. chopped red bell pepper
5-6 quartered crimini mushrooms, wiped clean
2 pieces Canadian bacon or regular bacon
1 handful spinach
1 -2 small garlic clove, minced
2-4 eggs
salt, to taste
freshly ground black pepper, to taste
Clean and peel the eyes from the potato then cut into cubes.Parboil to soften.
Cover the cubed potatoes with water; microwave for several minutes.
Drain water; add to a hot skillet with a small amount of olive oil. Saute until potatoes begin to turn golden brown.
Add onion and pepper; saute several minutes until softened.
Add mushrooms and Canadian bacon; combine and be careful because the heat can
cause the small Canadian bacon pieces to “jump” from the hot skillet.
Add spinach and garlic; combine and lower heat.
Prepare eggs to your preference.
Divide the potato mixture onto 2 plates. Place 1-2 cooked eggs on top of each serving.
Serve immediately.
