Description
This is a great dish to try if you are tired of your breakfast. It simple and easy to make and has a lot of tasty ingredients. Serve with toast, if you would like.
Ingredients
- 1 russet potato, washed and cubed
- 1/3 c. chopped onion
- 1/4 c. chopped red bell pepper
- 5-6 quartered crimini mushrooms, wiped clean
- 2 pieces Canadian bacon or regular bacon
- 1 handful spinach
- 1 -2 small garlic clove, minced
- 2-4 eggs
- salt, to taste
- freshly ground black pepper, to taste
Steps
- Clean and peel the eyes from the potato then cut into cubes.Parboil to soften.
- Cover the cubed potatoes with water; microwave for several minutes.
- Drain water; add to a hot skillet with a small amount of olive oil. Saute until potatoes begin to turn golden brown.
