This dish is so easy. Just dump all of the ingredients except for the cheese in the slow cooker and let the cooker do the work for you. It is very similar to chicken parmesan, so it is fantastically delicious.
4 chicken breasts, cubed
1 small onion, diced
1 large zucchini, diced
1 green pepper, diced
1 1/2 t. garlic, minced
1/2 t. onion powder
1/4 t. salt
1 T. Italian seasoning
1 1/2 c. pasta, pizza, or tomato sauce
1 c. low-fat shredded cheese
Parnesan cheese, for garnish
Line a slow cooker with a slow cooker liner for easy clean up. Spray the liner with non-stick cooking spray.
Combine all ingredients except for the shredded cheese; stir to combine.
Cover; cook on High for 3-4 hours or Low about 6-8, or until chicken is cooked through.
In the last 30 minutes of cooking, add the cheese; cook until cheese is melted.
Serve over pasta or quinoa. Garnish with Parmesan cheese, if desired.
