Use your favorite pasta to make this delicious casserole. It is cheesy and creamy with chicken and bacon, so it makes a wonderful main dish, but can also be a side dish, as well.
8 oz. dried pasta
2 medium sized chicken breasts, cut into bite size pieces
3 bacon slices, cut into small bits
1 onion, diced
1 1/2 c. 2 % milk
1/4 c. butter
1 T. all-purpose flour
1/3 c. grated Parmesan cheese
2 slices Havarti cheese or your favorite grated cheese on the top
salt, to taste
pepper, to taste
Preheat oven to 400 degrees.
Bring a pot of salted water to boil for the pasta. when boiling, add pasta and cook for 5 minutes. Remove from the heat; drain; set aside.
In a skillet, cook onion so until it softens; add the chicken; gently cook until sealed. Add bacon; cook 2 minutes. Set aside.
cheese sauce:
Turn heat to a low to medium heat. In a pot, melt the butter and add the flour; continually stir or whisk. When the flour has cooked for a minute or so, add some of the milk; continually stir or whisk. Keep adding the milk until it is all gone; stir. The sauce will thicken, and when it has, add in the cheese, salt and pepper, to taste.
Add chicken and bacon mixture to the sauce and the pasta; stir so all the ingredients are coated in the sauce.
Transfer the mixture to a heat-proof dish. Sprinkle on grated cheese or place the slices of Havarti on the top. Put in the oven; bake 30 minutes. The top should be slightly golden and bubbling, when done.
2-3 servings as a main dish
