If you need an outstanding sandwich dish, this one is the one that you should try. It takes very little prep time, so it is very easy to make. Serve with chips and coleslaw, if desired.
2 lb.pork tenderloin or roast, cut in half
1 T. seasoning salt
12 oz. root beer
2- 4 oz. liquid smoke
1 T. cider vinegar
1 c. barbeque sauce or special sauce (recipe below)
8 hamburger buns
sauce:
1 c. ketchup
1/2 c. brown sugar
1/4 c. Dijon mustard
1/4- 1/2 c. molasses
1/2 t. garlic salt
1/2 t. freshly ground black pepper
1 T. liquid smoke
2 T. Worcestershire sauce
1/8 t. cayenne pepper
1/2 c. juice from slow cooker, reserved
bread and butter pickles, if desired
Place a slow cooker liner in the bottom of a slow cooker for easy clean up.
Put the meat at the bottom of the crock; sprinkle with seasoning salt. Pour root beer, vinegar and liquid smoke over the top. Put the lid on the cooker; cook on low 8 hours.
When pork is done, remove it from the pan; shred with a fork. Place into a bowl; add in sauce, as well as 1/2 cup juice from the slow cooker.
Serve on a bun with bread and butter pickles, if desired.
sauce:
Add ketchup, brown sugar and mustard in a medium saucepan. Stir in remaining ingredients; simmer over medium-low heat about 15 minutes. Remove; serve with pulled pork sandwiches.
Makes 1 1/2 cups sauce.
