If your family doesn't want to eat their veggies, add it to their meatloaf. These meatloaf muffins are not only better for them, but they cook faster than a traditional meatloaf as well because they are smaller.
2 lb. ground beef or a mixture of ground beef and ground pork
1 c. uncooked Old-Fashioned or Fast Cooking Oats
1 c. ketchup, plus more for topping, if desired
10 oz. frozen mixed vegetables
2 eggs
1 packet meatloaf seasoning
Preheat oven to 350 degrees. Spray muffin pans for 18 muffins with non-stick cooking spray.
Combine ground meat, oats, ketchup, mixed vegetables, seasoning and eggs in a medium sized bowl; mix well. (If your family is picky and won't eat the meatloaf muffins if they see the veggies, put the veggies through a food processor first.)
Press meat mixture into muffin cups until filled.
If wanting a ketchup topping, after 20 minutes baking, top each with a little ketchup, then return them to the oven to finish cooking.
Bake 30 minutes total or until meat is done in the center.
