This budget friendly meal is pretty simple to make. For under $10, you will have your entire meal ready to eat at dinnertime. Serve with a salad and crusty bread, if desired.
1 lb. lean ground beef, browned and drained
1 1/2 lb. potatoes, diced large
3 carrots, sliced
1 onion, diced
2 garlic cloves, minced
6 oz. tomato paste
2-3 c. water or beef stock or combination of both
1 t. salt
1/2 t. freshly ground black pepper
1 t. onion powder
1 t. dried oregano
dash Worcestershire sauce
In a skillet, brown ground beef with diced onion and minced garlic. Discard grease.
Add the cooked ground beef with onion and garlic, potatoes, carrots and Worcestershire sauce to a 5 quart or larger slow cooker that has been lined with a slow cooker liner for easy clean up.
In a small bowl, whisk together tomato paste, water, salt, pepper, onion powder and oregano. Pour this over the ingredients in the slow cooker. Carefully stir so that the liner doesn't tear.
Cover; cook on LOW 6-7 hours, without lifting the lid during the cooking.
Serve with crusty bread or garlic bread or Texas toast.
** Liquid can be thickened with cornstarch or flour, if desired.
