You won't know whether to use a fork or a spoon when you eat this delicious breakfast. Serve with toast to help you soak up all of that delicious egg goodness. It would make a great lunch or dinner, as well!
1 cup marinara sauce, your favorite
4 large eggs
1/4 c. regular, fat free or lowfat milk
1/4 c. shredded Gruyere cheese
2 T. grated Parmesan cheese
kosher salt, to taste
freshly ground black pepper, to taste
1/4 c. basil leaves, chiffonade or Italian seasoning or dried basil, to taste
Preheat oven to 425 degrees. Lightly grease two 10 oz. ramekins.
Divide marinara sauce evenly into the 2 ramekins. Evenly top with eggs, milk, Gruyere and Parmesan cheeses; season with salt and pepper, to taste.
Bake until egg whites are cooked through, about 10 minutes.
Serve immediately, garnished with basil leaves, if desired.
