Description

These appetizers are great to serve and easy to make. Use leftover chicken or turkey or rotisserie chicken to make it quicker and easier.

Ingredients

• 8 oz. package Neufchatel (light) or regular cream cheese, softened
• 3 T. light sour cream
• 10 oz. can RoTel Tomatoes, drained
• 1/2-1 t. minced garlic
• 1/2 t. seasoning salt
• 1/4-1/2 t. freshly ground black pepper
• 1 c. shredded Cheddar cheese
• 5 green onions, thinly sliced
• 2.25 oz. can chopped olives, drained
• 1 jalapeno, seeded as desired and diced, optional
• 2 c. cooked, shredded chicken (rotisserie chicken is great or use leftover turkey)
• 5 large burrito size flour tortillas or wraps in assorted flavors

Steps

1. Using a mixer, combine cream cheese, sour cream, diced tomatoes, garlic, and seasonings. Use a spoon to stir in cheese, green onion, olives, jalapeno, and shredded chicken or turkey.
2. Divide mixture between the tortillas, spreading out evenly, leaving about a 1/2 inch border at the edge. Roll up tightly, then wrap rollups tightly in plastic wrap and transfer to the refrigerator to chill for at least 1 hour or until ready to serve.
3. Remove from refrigerator. Use a sharp knife to slice into 2 inch pieces.
