Description

Ingredients

  • 1/2 lb. pasta, your favorite
  • 2 T. finely chopped chives
  • 1/2 c. cream or heavy cream
  • 1/2 c. freshly grated Parmesan cheese
  • 2 t. olive oil
  • 2 large eggs
  • 1/2 lb. bacon, crisply fried and crumbled
  • salt, to taste
  • freshly ground black pepper, to taste

Steps

  1. In a large bowl, mix eggs, cream, Parmesan cheese, salt, pepper and olive oil in a bowl; set aside.
  2. In a large skillet, cook bacon until just crisp; crumble; set aside.
  3. Cook pasta according to package directions. Drain pasta; while pasta is piping hot, add egg / cream sauce into pasta; stir over low heat 1- 2 minutes until fully incorporated.
