When it is cold outside, you need a yummy, warm and hearty meal in the slow cooker. It's nice to come home to a delicious dinner when you have been busy and just want a comforting dish.
4 (6 1/2 oz.) cans minced clams, with juice
1/2 lb. salt pork or bacon, diced
1 c. chopped onion
6 - 8 medium potatoes, washed, peeled and cubed
3 c. water
3 1/2 t. salt
1/4 t. pepper
1 1/2 t. dried marjoram
1/2 t. dried thyme
4 c. half and half cream or milk, divided
3 - 4 T. cornstarch
chopped fresh parsley, for garnish
Cut clams into bite-sized pieces, if necessary.
Line a slow cooker with a slow cooker liner for easy clean up.
In a skillet, saute salt pork or bacon and onion until golden brown; drain.
Put clams, bacon and onion into slow cooker. Add all remaining ingredients, except for the cornstarch, half and half or milk, and parsley.
Cover; cook on High 3 - 4 hours or until vegetables are tender.
During the last hour of cooking, combine 1 c. milk or half and half with the cornstarch. Add the cornstarch mixture and the remaining milk or half and half; stir well; heat through.
Garnish each serving with a little chopped parsley. Serve with crackers or crusty French bread.
