Why eat frozen pot pies when you can easily make your own. You control the ingredients and the taste is so much better.
4 carrots
fresh corn, or frozen, if desired
1/2 c. peas
1 lb. chicken cutlets
salt and pepper, to taste
4 T. butter
1/4 c. flour
2 c. chicken broth/stock
2 T. heavy cream
Steam carrots and chop.
Roast fresh corn, if desired, or just use frozen corn. Get peas ready.
Grill chicken cutlets in a grill pan with salt and pepper. Cut into small pieces.
In a pot or a pan, melt butter and sprinkle in flour, stirring to combine. Cook 1 minute.
Add chicken broth/stock and heavy cream. Stir to combine; simmer on low to thicken.
Stir in the carrots, peas, corn and chicken. Season with salt and pepper.
Bake in pie crust according to package directions or your homemade recipe.
