It is so easy to make your own Nacho Cheese sauce and it tastes a million times better than canned. Serve with your favorite chips.
2 T. butter
2 T. flour
1 c. whole milk
1/4 t. salt
1/8 t. cayenne pepper
8 oz. block good quality Sharp cheddar cheese, grated (not bagged)
Melt butter in a medium skillet over medium heat. When the butter is melted, add the flour; whisk until it combines into a smooth blond paste and starts to bubble around the edges.
Add the milk to the skillet; continue whisking. When the milk is incorporated, raise heat to high; bring to a boil. When milk has reached a boil, quickly lower the heat and reduce to a simmer. Allow the sauce to thicken slightly.
Add cayenne pepper and salt; whisk to combine.
Add the cheese and gently stir, allowing the cheese to melt. When the cheese is completely melted and the mixture smooth in consistency, the sauce is ready.
Serve immediately, as the sauce will get firm as it sits.
