These meatballs are very versatile. They can be served as appetizers, on dollar rolls for sandwiches, in spaghetti sauce or just on their own with chips or fries, and a veggie on the side.
1 lb. lean ground beef
1 lb. ground pork
1/4 lb. bacon, chopped small
1 c. panko or plain breadcrumbs
2 eggs, lightly beaten
1 1/2 t. salt
1/2 t. freshly ground black pepper
several dashes of nutmeg, or to taste
1 t. granulated onion, onion powder, or fresh onion, very finely chopped
4 - 6 oz. thinly sliced Cheddar or Pepper Jack cheese, cut into 1 in. squares
Preheat oven to 400 degrees. Line 2 baking sheets with aluminum foil. Spray foil with non-stick cooking spray.
Combine beef, pork, and bacon in a large mixing bowl. Mix together. Add breadcrumbs, eggs, salt, pepper, nutmeg and onion powder. Mix.
Scoop and shape into 1 inch meatballs. Place on prepared baking sheets.
Bake 18 minutes. Remove meatballs from the oven; increase oven temperature to broil.
Top each meatball with a small square of cheese; broil 1 1/2 - 2 minutes, just until the cheese has melted.
