Description

Serve this delicious cheesy shrimp casserole as an appetizer or as a meal. It is especially great to serve at parties since everyone enjoys their own dish of heavenly cheese, shrimp and rice in creamy mushroom soup.

Ingredients

1 lb. medium size shrimp
3 bags Minute® Multi-Grain Medley rice
1 can cream of mushroom soup
2 c. Cheddar cheese, shredded
2 t. Old Bay seasoning
2 t. onion powder
1 t. salt
freshly ground black pepper, to taste

Preheat oven to 350 degrees.

Cook rice according to instructions on package.

In a separate pot, boil water; add shrimp, cooking 3 - 4 minutes or until shrimp are cooked through. Drain.

Combine cooked rice, cooked shrimp and remaining ingredients in one bowl, stirring to mix thoroughly.

Portion mixture into 6-8 ramekins.

Cover ramekins with lids or foil; place on a baking sheet.

Bake in oven for 20 minutes or until cheesy is melted and bubbling.

Remove and serve.
