Make these amazing bacon muffin cups for your family or guests. They are easy enough to make often and special enough for weekends or when company comes calling.
6 bread slices
12 eggs
12 bacon slices
shredded cheese, your favorite
Preheat oven to 400 degrees. Spray 2 muffin tins (12 wells) with non-stick cooking spray.
Heat a skillet on medium-high heat, cook the bacon and only allow it to cook for about 4-5 minutes, so it is flexible but not raw.
While the bacon is cooking, cut 2 circles out of each slice of bread,12 circles in all.
Lay a bread circle into the bottom of each muffin cup. Wrap the bacon around the edge of each muffin cup. Sprinkle cheese on top of the bread slices.
Crack an egg into each cup.
Bake 10-15 minutes or until the whites have set and the yolk is cooked as desired.
