Make your boring chicken breasts special with this fabulous recipe. It is so good, it can be served during the holidays or special occasions.
6 - 6 oz. each boneless skinless chicken breast halves
3-4 oz. crumbled Gorgonzola or goat cheese
1/2 c. dried cranberries
2/3 c. chopped walnuts or your choice of nuts
1/3 c. packed fresh parsley sprigs
2/3 c. dry bread crumbs
1/2 t. salt
1/2 t. freshly ground black pepper
2 eggs, beaten
1 T. Dijon mustard
1/2 c. all-purpose flour
Preheat oven to 350 degrees. Grease a 15 x 10 x 1 inch baking pan.
Flatten chicken to 1/4 inch thickness.
In a small bowl, combine Gorgonzola cheese and dried cranberries. Spoon 1/4 c. cheese mixture down the center of each flattened chicken breast. Roll up; secure with toothpicks.
Place walnuts and parsley in a food processor; cover and process until ground. Transfer to a shallow bowl; stir in the bread crumbs, salt and pepper.
In another shallow bowl, combine eggs and mustard. Place flour in a third shallow bowl.
Coat chicken with flour, then dip in egg mixture and coat with walnut mixture.
Place seam side down in the prepared baking pan. Bake 35-40 minutes or until a thermometer reads 170°.
Discard toothpicks before serving.
