Cranberry and Gorgonzola Cheese Stuffed Chicken Breasts

Description

Make your boring chicken breasts special with this fabulous recipe. It is so good, it can be served during the holidays or special occasions.

Ingredients

  • 6 - 6 oz. each boneless skinless chicken breast halves
  • 3-4 oz. crumbled Gorgonzola or goat cheese
  • 1/2 c. dried cranberries
  • 2/3 c. chopped walnuts or your choice of nuts
  • 1/3 c. packed fresh parsley sprigs
  • 2/3 c. dry bread crumbs
  • 1/2 t. salt
  • 1/2 t. freshly ground black pepper
  • 2 eggs, beaten
  • 1 T. Dijon mustard
  • 1/2 c. all-purpose flour

Steps

  1. Preheat oven to 350 degrees. Grease a 15 x 10 x 1 inch baking pan.
  2. Flatten chicken to 1/4 inch thickness.
  3. In a small bowl, combine Gorgonzola cheese and dried cranberries. Spoon 1/4 c. cheese mixture down the center of each flattened chicken breast. Roll up; secure with toothpicks.
