Description
This chicken dish will be a winner in your home. You will love it too because it makes for an easy weeknight meal. Most importantly though, it is simply delicious.
Ingredients
- 1 T. butter
- 3 cloves garlic, minced
- 1 large chicken breast, cut into bite-sized pieces
- 3/4 c. mushrooms, sliced
- 1 c. uncooked Jasmine rice
- 2 c. chicken stock or broth
- 1/2 c. shredded Parmesan cheese
- 2 T. fresh basil, chopped
- salt, to taste
- freshly ground black pepper, to taste
Steps
- Wash chicken and pat dry with paper towels.
- In a large skillet, melt butter over medium to medium high heat. Saute the garlic and chicken for about 4-5 minutes; add mushrooms and saute for another few minutes. Season with salt and pepper, if desired.
- Add rice and stock/broth; bring to a boil; reduce heat, cover and simmer about 15 minutes, stirring occasionally. Add Parmesan cheese and basil; simmer 5 minutes or until rice is cooked through and liquid is absorbed.
