This chicken dish will be a winner in your home. You will love it too because it makes for an easy weeknight meal. Most importantly though, it is simply delicious.
1 T. butter
3 cloves garlic, minced
1 large chicken breast, cut into bite-sized pieces
3/4 c. mushrooms, sliced
1 c. uncooked Jasmine rice
2 c. chicken stock or broth
1/2 c. shredded Parmesan cheese
2 T. fresh basil, chopped
salt, to taste
freshly ground black pepper, to taste
Wash chicken and pat dry with paper towels.
In a large skillet, melt butter over medium to medium high heat. Saute the garlic and chicken for about 4-5 minutes; add mushrooms and saute for another few minutes. Season with salt and pepper, if desired.
Add rice and stock/broth; bring to a boil; reduce heat, cover and simmer about 15 minutes, stirring occasionally. Add Parmesan cheese and basil; simmer 5 minutes or until rice is cooked through and liquid is absorbed.
