Are you looking for a new dinner idea? How about meatball sandwiches made in the slow cooker? They are almost effortless and so good you might have to double the recipe!
1 lb. lean ground beef (ground pork, mixture of ground pork and ground beef or ground turkey are good as well)
1 egg
1/2 c. Italian bread crumbs
1 t. garlic powder
1/2 t. salt
freshly ground black pepper
1 jar pasta sauce (or 24 oz. homemade pasta sauce)
4 submarine/hoagie/Italian rolls (6 in. long each)
4 oz. shredded Mozzarella cheese
grated or shredded Parmesan cheese, optional
In a medium bowl, combine ground meat with egg, bread crumbs, garlic powder, salt, and pepper. Mix until all ingredients are well incorporated.
Line the slow cooker with a slow cooker liner for easy clean up.
Form mixture into 12 meatballs, taking care not to make them too compact. Place meatballs in the bottom of the lined slow cooker. Pour pasta sauce over meatballs, making sure that each one is completely covered.
Cook on Low for 8 hours on High for 4 hours or until meatballs are done.
To serve, cut each roll lengthwise; place 3 meatballs inside. Sprinkle with Mozzarella cheese. The hot meatballs should cause the cheese to melt, but if not, you may place sandwiches under the oven broiler for a minute to melt cheese completely.
Sprinkle with Parmesan cheese, if desired, and serve hot.
