This meatloaf is very moist and tasty. It's a winning recipe that you will want to save for the future. Make meatloaf sandwiches from the leftovers, that is, if you have any!
1 lb. ground chuck
1 lb. ground pork
2 c. raw oatmeal
2 medium eggs, beaten
2 T. beef bouillon granules
1 t. allspice
1 t. freshly ground black pepper
1⁄4 t. thyme
1⁄2 c. onion, minced
1/4 - 1⁄2 c. minced green pepper, optional
Sauce:
1 c. diced onion
16 oz. canned gold stewed tomatoes
3 T. Jack Daniels whiskey
1⁄4 t. nutmeg, optional
Preheat oven to 350 degrees.
Combine beef, pork, oats, onion and green pepper in a large bowl; mix well.
In a separate bowl, add beef granules, pepper, allspice and thyme to beaten eggs. Beat until well mixed. Pour into meat mixture; mix until thoroughly mixed.
Place into greased loaf pan, shape and bake 1 1/2 hours.
Sauce:
Pour any stock/drippings from meatloaf pan into a small saucepan. Add onion, and cook until tender, about 5 minutes. Add stewed tomatoes, Jack Daniels and nutmeg.
Cover; simmer 15 minutes. Serve over warm meatloaf slices.
