This meatloaf can be prepared either in the oven or in the crock pot. It is easy and delicious. The Jack Daniel's BBQ sauce makes it so special!
1 c. chopped or grated onion
1 t olive oil
1/4 t. salt
1/8 t. freshly ground black pepper
½ t. dried thyme leaves
2 t. Worcestershire sauce
1/3 c. chicken stock
1 T. tomato paste
2 lb. lean ground beef
1 c. coarse dry bread crumbs
2 large eggs
1/3 c. Jack Daniel's BBQ sauce
1/2 small onion, thinly sliced, optional
Preheat oven to 325 degrees. Grease a loaf pan of an 8 x 8 inch baking pan.
In a medium skillet, on medium-low heat, cook onions, olive oil, salt, pepper and thyme until onions are translucent, but not browned, about 15 minutes. Add Worcestershire sauce, chicken stock and tomato paste; mix well. Cool to room temperature.
Combine ground beef, bread crumbs, eggs and onion mixture in a large bowl. Mix well; shape into a loaf in the prepared pan. Spread BBQ sauce evenly on top. Scatter the thinly sliced onions over the top.
Bake uncovered for about 1 hour until meatloaf is cooked through.
***You can also prepare the meatloaf as stated and then place it in a crockpot that has been lined with a greased crock pot liner, and cook on Low 4 hours.
