Try this amazing variation of chicken kiev. It's loaded with Dijon mustard, prosciutto, and peaches, then rolled in corn flakes, cheese and parley. It's too good to miss!
4 skinless, boneless chicken breast halves
1 T. dijon-style mustard
1/4 lb. thinly sliced prosciutto ham
4 peaches, peeled and sliced
1/2 c. crushed corn flakes
1 T. grated parmesan cheese
1 T. parsley flakes
1 egg, slightly beaten
1/4 c. peach-flavored schnapps or peach nectar
2 T. butter, melted
Wash chicken and pat dry with paper towels.
Place chicken breasts between 2 sheets of waxed paper; pound 1/4-inch thick. Spread mustard evenly over chicken. Top each with 1/4 of the prosciutto and two peach slices. Roll up and secure with wooden toothpicks. Be sure to count the toothpicks, so that when you remove them later, you will remove all of them.
In a small dish, stir together corn flake crumbs, Parmesan cheese, and parsley flakes. Dip each chicken roll in egg, then roll in crumb mixture. Place in a large shallow microwave-safe dish. Microwave on High 6 minutes, rearranging chicken after 3 minutes for even cooking.
In a medium bowl, toss remaining peach slices with schnapps and butter. Pour over chicken; microwave on High 5 - 6 minutes, or until juices run clear when chicken is pierced with fork.
Be careful to remove all wooden toothpicks; let stand 5 minutes before serving.
